Protein bread with carrots, with smoked turkey breast and mango

For 2 portions:

  • ½ ripe mango
  • 1-2 teaspoons of lemon juice
  • 200g cucumber
  • 60g peanut butter with crunch
  • 4 slices of Mestemacher protein bread with carrots
  • 8 wafer thin slices of smoked turkey breast
  • 20g roasted, salted peanut kernels
  • Some stalks of cilantro
  1. Peel the mango, cut it into fine wedges and drizzle with lemon juice. Rinse off the cucumber, dab it dry and cut it into slices.
  2. Spread peanut butter onto the bread slices, top with turkey breast, cucumbers slices and cucumber. Sprinkle with peanut kernels. Garnish with coriander.

Tip: Instead of fresh mango, you can also use pear wedges.
