Salmon toast with Mediterranean vegetables
Ingredients for 2 toast rolls:
- 2 High Protein Toast Rolls or Protein toast rolls
- 4 slices of salmon
- 1 zucchini
- 1 carrot
- 1 red onion
- 2 handfuls of cocktail tomatoes
- 2 teaspoons dried Italian herbs
- 50 grams of grated Parmesan cheese
The recipes are suitable for the high protein bread – fine – and the high protein toast rolls – fine – as well as for all Mestemacher protein bread types and protein toast rolls.
- Slice the carrot and courgette, dice the onion.
- Heat the oil in a pan. First sauté the carrot slices for a few minutes. Then add the zucchini and the onion. Finally, add the cocktail tomatoes and briefly sauté.
- Season with herbs, according to taste.
- Toast the toast rolls in the toaster.
- Top each half with salmon and place the vegetables on the salmon.
- Sprinkle the Parmesan over the vegetables and serve.
