Salmon toast with Mediterranean vegetables

Ingredients for 2 toast rolls:

  • 2 High Protein Toast Rolls or Protein toast rolls
  • 4 slices of salmon
  • 1 zucchini
  • 1 carrot
  • 1 red onion
  • 2 handfuls of cocktail tomatoes
  • 2 teaspoons dried Italian herbs
  • 50 grams of grated Parmesan cheese

The recipes are suitable for the high protein bread – fine – and the high protein toast rolls – fine – as well as for all Mestemacher protein bread types and protein toast rolls.


  1. Slice the carrot and courgette, dice the onion.
  2. Heat the oil in a pan. First sauté the carrot slices for a few minutes. Then add the zucchini and the onion. Finally, add the cocktail tomatoes and briefly sauté.
  3. Season with herbs, according to taste.
  4. Toast the toast rolls in the toaster.
  5. Top each half with salmon and place the vegetables on the salmon.
  6. Sprinkle the Parmesan over the vegetables and serve.
