Fitness bread

serves 2

  • 4 slices of Mestemacher Fitness Bread
  • 100 g cream cheese with herbs
  • 1 small courgette
  • 1 red pepper
  • 1 small aubergine
  • 1/4 branch thyme
  • 1/4 branch chopped rosemary
  • 1 clove of garlic
  • 1 bunch chives
  • 2 tablespoons of olive oil
  • Salt
  • Black pepper
  1. Slice courgette, aubergine in slices and cut red pepper into segments.
  2. Heat the oil in a pan and roast the vegetables while constantly stirring.
  3. Add thyme, rosemary and garlic, stir-fry for another 2 minutes and leave to cool.
  4. Chop chives very finely and roll in pieces of cheese to about the size of a walnut.
  5. Place the vegetables on the bread and put the chive/cheese corners on top.

Tip: Put the corners on slices of pumpernickel with a salad leaf – great for parties. Also delicious with cream cheese with chives flavour!
