Vegetarian wraps with ricotta cheese and courgettes

for 4 wraps

  • 4 Mestemacher Wraps
  • 150g courgettes
  • 12-14 cocktail tomatoes
  • 200g ricotta cheese
  • 2 stalks fresh thyme
  • 40g pine nuts
  • 2 tablespoons of olive oil
  • salt
  • pepper
  1. Roast the pine nuts in a pan without fat.
  2. Wash the thyme, dry it, and chop it finely.
  3. Wash the courgettes, first cut them in slices and then into fine strips, fry them in olive oil and allow them to cool down slightly.
  4. Wash the cocktail tomatoes, quarter them, remove the seeds and add the courgettes to them, then add salt and pepper.
  5. Prepare the 4 wraps according to the package instructions, stir the ricotta cheese until creamy and then spread onto the wraps.
  6. Spread the vegetables onto them, then sprinkle with chopped thyme and pine nuts.
  7. Roll up and serve.
