Toasted roll with pea-mint spread and grilled bell pepper

Ingredients for 4 toasted rolls:

  • 4 Mestemacher toasted rolls
  • 200g peas (deep-frozen)
  • 1 red and 1 yellow bell pepper
  • 4 tablespoons of olive oil
  • salt, pepper
  • 20g pine nuts
  • 1 clove of garlic
  • juice of ½ a lemon
  • 2 stalks of mint
  1. Allow the peas to thaw.
  2. Wash the bell peppers, quarter them and remove the seeds. Grill on a grill or in a grill pan from both sides for 4 minutes.
  3. Place the bell pepper pieces on a plate, drizzle with olive oil and season with salt and pepper.
  4. Fry the pine nuts without fat in a pan.
  5. Peel the garlic, chop it and place it in a tall container with the remaining ingredients. Blend with an immersion blender. Season with salt and pepper.
  6. Toast the toasted roll and spread it with the pea-mint spread. Cut the bell peppers into strips and place on the base.
