Protein bread with walnuts with fried leek

For 2 portions:

  • 2 thin stalks of leek
  • 2 tablespoons of olive oil
  • 4 slices of Mestemacher protein bread with walnuts
  • 4 tomatoes marinated in oil
  • 30g of Parmesan shavings
  • mixed pepper
  • basil for garnishing
  1. Clean the leek, wash it, halve it down the length and cut it into about 5 cm long pieces. Fasten the pieces crossways with little wooden picks. Fry the leeks in olive oil for about 3 minutes, from both sides. Season with pepper. Set it aside to cool down a little bit, remove the wooden picks.
  2. Let the tomatoes drip off slightly and cut them into broad strips. Put onto the bread slices, together with the leek and Parmesan. Garnish with basil leaves.

Tip: instead of leek, you can also fry courgette pieces.
