Colourful scrambled egg with vegetables on Mestemacher PURE NATURAL bread

Ingredients serves 4

  • 4 slices Mestemacher PURE NATURAL
  • 4 eggs
  • 4 tbsp. sour cream
  • 1 red onion
  • ½ bunch of chives
  • 1 small zucchini
  • 1 handful of cocktail tomatoes
  • In each case ½ tsp. salt, pepper, rosen paprika

Preparation

  1. Peel the onion and chop it finely. Cut the chives into fine rolls. Put some aside for garnishing. Wash and dice the zucchini.
  2. Crack the eggs into a tall container and whisk. Mix in the chives, zucchini, onion and the seasoning. Finally, carefully fold in the sour cream.
  3. Place the scrambled egg in a pan with melted butter and allow to cook. Then stir the egg with a spatula. Shortly before the end is done, add the tomatoes to the pan.
  4. Halve the slices of bread and place on a plate. Put the scrambled egg on top and garnish with the remaining chives.
