Fitness Bread with Avocado in Lemon Herb oil

Ingredients for 2 bread slices:

  • 2 slices of Mestemacher Fitness Bread
  • 1–2 twigs of mint
  • 1–2 twigs of parsley
  • 4 tablespoons of olive oil
  • lemon zest of a ¼ lemon
  • Salt, pepper
  • 1 large tomato
  • ½ half of an avocado
  1. Pluck the herbs from the stalks, chop coarsely and mix with the olive oil.
  2. Add the lemon zest and season to taste with salt and pepper.
  3. Quarter the tomato and remove the seeds. Dice the fruit meat and also add to the oil.
  4. Peel the avocado and cut into slices.
  5. Place the avocado slices on the bread slices and drizzle with herb oil.
