Smørrebrød with chicken breast, tomatoes and herb mayonnaise


  • 2 slices of organic wholemeal Mestemacher bread
  • 2 fillet of chicken breast
  • 100 grams of mayonnaise
  • ½ bunch of parsley
  • ½ bunch of chives
  • ½ cucumber
  • 4 tomatoes
  • 1 small onion
  • 1 tbsp. of white Balsamic vinegar
  • Salt and pepper according to taste


  1. Chop the herbs finely and stir them into the mayonnaise. Season the chicken breast fillets with salt and pepper and fry in the pan.
  2. Dice the onion and the tomatoes and stir with the Balsamic vinegar. Cut the cucumber into fine strips.
  3. Spread mayonnaise on the slices of organic wholemeal bread. Cut the chicken breast into pieces and alternate layering the bread with the chicken and cucumber .
  4. Place the tomato salad on top and garnish with herbs.
