Pumpernickel-Cashew Bites with Figs, Cress and Pistachios

Ingredients for approx. 10 pieces:

  • 170 g Mestemacher Pumpernickel
  • 1 fig
  • 3 tablespoons of cashew mousse
  • 2 tablespoons of cress
  • Salt
  • Freshly ground black pepper
  • 5 tablespoons of chopped pistachios
  • Chocolate paper cups
  1. Use a knife to crumble the pumpernickel.
  2. Wash the fig, pat it dry and dice finely.
  3. Mix the cashew mousse with the pumpernickel. Mix well, before adding the diced fig and cress. Season with salt and pepper.
  4. Form small, round hand-made bites from the mass.
  5. Coat the bites in the chopped pistachios and place them in the chocolate paper cups.
